A wholesome chickpea and mint salad with a honey-yogurt-lime dressing to give you that boost of nutrition while leaving you feeling light on hot summer days.
250gm cooked chickpeas (boil in advance until soft and leave to cool)
1 large (or 2 small) cucumber
sprig of mint leaves
handful of black olives (optional)
For the dressing:
3tbsp lime juice
4tbsp thick yogurt
1.5tbsp olive oil
1/2tsp either oregano or ground cumin for flavour (optional)
Salt to taste
1. Dice the peppers and cucumber and de-seed and then slice or dice tomatoes. Add to a bowl together with the chickpeas.
2. Prepare the dressing by mixing together the ingredients. The yogurt you use should not have too much water content.
3. Tear the mint leaves and add to the salad along with the dressing. Mix well. Chill in the refrigerator for 20-30 mins and serve.
